Sure lvl 73's have a purpose - they make great decoration. You can buy a deed from a BE, put it up in a mall or guild hall. (if you're just that pompous, you can use your house too :P). Amaze your friends, scare the newbs!

A bit late, but pretty much any pack animal that can be found on the plains will work for milking. Most (at least on Tat, Dant, and Naboo, main sites I use for this) will show as 'wild milk' and can be stacked, though it is possible to get other types, ie-domestic.

First off, hey! :) Just found this forum today, and it's been a great help already.

Second, for avian meat, there are also the low-level nunas, usually a pack or two outside of Talus' gates. This is good for the trainers who are just starting, and only have baby pets but still want handling XP.
