Beating the Sith is possible, but you will have to group to do so. They are still around CL 77. (If you are planning on doing any of the FS combat-related lines you'll need to get your own level up for sure.)
I cannot say if the system will work for you or not. I left before the CU and had nine months to forget enough that adjusting to the CU was not that big a deal. But then I also had a level in the 70s so I have never had to survive as a low level character.
